The time capsule should have been opened in 2020, the 150th anniversary of the establishment of the Ballarat School of Mines, but was postponed due to successive lockdowns during the Covid19 pandemic. Manufactures Restaurant and Café Water Boiler Commercial Kitchen ...Jackson Boilers were based in Leeds, manufacturing instantaneous water boilers and later coffee machines for restaurants and canteens. They appear to have still been in business in 1971 but there is scant information available at this time regards the company history or origins. Jacksons became very successful throughout the first half of the twentieth century with showrooms and sales offices in Scotland the Midlands and Southern England they also had an office in Dublin Ireland. In the 1920s they began to supply many shipping lines with catering water boilers for their ships and applied for a USA patent for the tube boiler in 1930 the design for which appears to have been invented in 1926. It is assumed that the company was taken over and amalgamated sometime in the 1970s but the writer has been unable to establish what exactly happened to the company and who had taken it over or when it first started to produce water boilers for commercial sale. it is assumed Jacksons began production of water boilers in the late 19th century. The Jackson boiler was recovered from the Reginald M, a small cargo vessel that was built in Port Adelaide in 1922 and was named after her builder and first owner John Murch. It was launched at Largs Bay South Australia in 1922 to carry cargo around South Australia including guano, barley, wool, horses, cattle, timber, explosives, potatoes, shell grit, and gypsum. It passed through numerous owners over the years and primarily maintained its purpose as a cargo vessel. After it was decommissioned for many years the vessel was purchased in 1975 by Flagstaff Hill Maritime Museum. Restoration efforts were undertaken, but unfortunately, although restoration was maintained for the craft above the waterline, the deterioration below the surface meant that the Reginald M was resting on the bottom of the lake at Flagstaff Hill Maritime Village and unsafe for visitors to board. As a result, it was removed in pieces from Flagstaff Hill in 2018. Flagstaff Hill's collection includes several items from the vessel.The subject item is a tube water boiler designed specifically for use in a ship's restaurant or dining area and patented by Jackson Boilers of Leeds. The item is significant as its patented design illustrates the evolution of commercial and domestic water boilers that have led to many innervations and improvements in today's boilers that are used in heating and in producing hot water for domestic and catering use. It is also significant as it is one of the earlier boilers the Jackson company made in the early 1920s before they applied for a US patent on their revised design in 1926. Water boiler, free standing Jackson's Tube boiler. Tall metal cylindrical stand with metal sphere on top and several pipe fittings on the sides. A brass tap with a lever handle is connected to the front. A plaque with maker's details is attached under the tap, Details are also impressed into the cylinder above the tap.Jackson Boilers Leeds Ltd. "JACKSON'S PATENT" . (cereal/soup) belongs to a commercial kitchen environment ...This bowl was used by the State Electricity Commission of Victoria in their mess rooms for their workers during the construction of the Kiewa Hydro Electric Scheme. The imprint of the year "1921" was to identify the year that the SECV was formed which relieved the private VHEC (Victorian Hydro-Electric Company). As the scheme was of such a huge scope, isolated and time consuming nature, the feeding of its workers was quite demanding of cutlery and crockery. The use of sturdy English cups and saucers was essential. The period of construction and the isolation of the Kiewa Valley area placed heavy demand for "solid" crockery that could wear abusive handling. This period in time was one when crockery, whether for domestic or commercial use, was imported from "mother" England. This scenario was more so for governmental bodies such as rail, jails and electricity providers than domestic users. The influx of cheaper Asian crockery had not yet begun.This type of crockery item was used by the thousands of SEC Victorian staff and construction workers involved in the building of the Kiewa Hydro Electricity Scheme, over the extensive period (1938 to 1961). This was a period when Government bodies and other semi- government organisations were still tied to the "establishments" of "mother" England. It was a period in Australia's development when the Asian influence was very weak and the established ties to England and Europe was still very strong. The majority of heavy equipment and machinery was either made in England or Europe. Local/European expertise in dam construction and water management in alpine terrain came from migrants and specialist recruited from England and Europe. The quality of workmanship from big steel manufacturing plants in England and Europe could not be matched from anywhere else in the developed world.This item is a white ceramic State Electricity Commission of Victoria bowl. It is made in England and is of strong and durable ceramic. The 5mm thickness of the ceramic suggests this bowl (cereal/soup) belongs to a commercial kitchen environment and not domestic. The indent bottom of the bowl is 5mm deep with a side curvature ratio of 2:5. The ceramic is glazed to a commercial standard (worker's mess). See also KVHS 0128 (B to D) for other ceramic crockery. The seal of the State Electricity Commission of Victoria is imprinted on the top outside rim within a curved scroll and a raised fist with electrical "charges" extending out.. The period of construction and the isolation of the Kiewa Valley area placed heavy demand for "solid" crockery that could wear abusive handling. This period in time was one when crockery, whether for domestic or commercial use, was imported from "mother" England. This scenario was more so for governmental bodies such as rail, jails and electricity providers than domestic users. The influx of cheaper Asian crockery had not yet begun.This type of crockery item was used by the thousands of SEC Victorian staff and construction workers involved in the building of the Kiewa Hydro Electricity Scheme, over the extensive period (1938 to 1961). This was a period when Government bodies and other semi- government organisations were still tide to the "establishments" of "mother" England. It was a period in Australia's development when the Asian influence was very weak and the established ties to England and Europe was still very strong. The majority of heavy equipment and machinery was either made in England or Europe. Local expertise in dam construction and water management in alpine terrain came from migrants for England and Europe. The quality of workmanship from big steel manufacturing plants in England and Europe could not be matched from anywhere else in the developed world.This item is a white ceramic plate (bread & butter). It is made in England and is of strong and durable ceramic. The bottom of the plate is flat with edges sloping out (to position the bread) and the extended rim is to catch any spillages. The 5mm thickness of the ceramic suggests this plate belongs to a commercial kitchen/eating establishment (mess) and not a domestic dining room. The indent bottom of the plate is 5mm deep with a side curvature ratio of 2:5. The ceramic is glazed to a commercial standard (see KVHS 0128 for its saucer part of a dinner set.The seal of the State Electricity Commission Of Victoria is imprinted on the top inside rim within a curved scroll. Snuggled within the borders of the scroll is a banner with the five stars of the southern cross and an arm with a closed fist projecting from the top with five lightning bolts projecting outwards. The taste buds of the average Australian diner ...This item was used at a time when there was a limited range of spices available and sought after by domestic and commercial kitchens. The taste buds of the average Australian diner were limited to the basic English style dishes which had been delivered by the early colonial days. Rural areas where slower in experimenting with Asian and European cuisine. The influx of European cuisine from refugees fleeing both World War I and world War II brought a different appreciation of gourmet food. The increase in Asian spices was brought about by Australians becoming more aware of the Asian "scene" through the conflicts of Korean and Vietnam military action. The "standard" type spices such as Cinnamon, nutmeg and similar spices offered by Robert Harper and later other Food and Spices whole sellers and processors where a direct result of a greater influx of migrants from spices rich societies and resulted in a greater range of "Asian" spices This became more visible after demise of the "White Australian Policy" on immigration and the great media revolution of Televised cooking shows from the 1950s on. The sustainability of containers such as this re-useable tin and cardboard spice holder, which could be replenished and not thrown away after it was empty was it a time period well before the "throw away" society had crept into the Valley.This spice container was used mainly in domestic kitchen within the Kiewa Valley. Those European construction workers of the SEC Kiewa Hydro Electricity Scheme had brought their continental cuisine into the valley and that was the beginning of a new era in highlighting different tastes. This rural valley had a greater interaction with people from other nation's cuisines and by association became more infused with a broader range of spices and food preparations.This item (spice shaker) is constructed by using a thick cardboard cylinder with both ends closed by tin plated light steel lids. The bottom lid is not removable however the top lid is removable to allow the contents (Cinnamon Spice) to be refilled. The lid has thirteen small holes which allow the contents to be shaken out. The outer side of the cylinder has been covered (glued on) by a printed black and yellow label detailing contents , weight, and supplier.On the front side of the printed label outside of the label boundary is "To make a shaker of this tin - take the lid off and remove the paper from inside the lid" Within the marked horse shoe shaped boundary is" HARPER'S ground spices star brand" underneath "CINNAMON" underneath this is printed "1 oz. It used kerosene as a power source and was promoted as ideal for outback stations where ice was not available. According to Museum Victoria, Hallstrom introduced the 'Silent Night' which ran on electricity or gas in 1935. However, Hailstorm's great-grandson, stated that the Silent Night refrigerator was introduced in 1928. Although Australians were among the pioneers of refrigeration in the 1850s, the technology wasn't adapted for domestic use until many decades later. The first domestic electric refrigerator was sold in America in 1913. It had an air-cooled refrigeration unit mounted on top of an ice box. The Frigidaire and Kelvinator brands date from 1918 when the first self-contained fridges were sold. Before this food safes were used as well to keep food away from flies and to keep items cool.A significant item used from the late Victorian era until around 1940 when people were beginning to be able to afford domestic refrigerators. After the second world war, most households had replaced their food storage cupboards or safes with refrigerators. Scales Weighing, early 1900's
Although these scales cannot be identified against a historical period of Australian development they are therefore placed in a time frame when commercial markings from manufacurers were not important enough to have domestic kitchen items labeled. These cast iron scales were made for domestic and possibly rural areas and not for cities where demand for known branded utensils was more an issue. These scales are very "basic" and not to the level of weighing detail that commercial scales had to be at. These scales do not show any visible markers for accurate measurement. The "near enough is good enough" principle can be related to these scales.These scales are significant as they identify one of the basic preparation items for the weighing of foodstuff before the televising of "cooking" shows (1960s onward). The meals for which quantity measurements are required for domestic cooking is not exact however the use of cup measurements for large dishes is tedious and these scales offer the capacity for a larger mixture and an easier method for the "cook". As the need for accurate measurements of ingrediants for rural domestic meals has in the past been not been critical the requirement of accuracy that these scales do not provide is of no consequence. Domestic kitchens in the Kiewa Valley and the type of meals produced would not have required the accuracy of ingrediants that "modern " international cuisines of the later 1900's require. These kitchen scale were used whenrecipes had the terms "pinch, dollop, squidge and smidgen" were about as accurate as most recipes needed to be.Black cast iron, medium weighing scales, with a two arm cradle. On one side of the cradle is a two half circle holding frame for the retention of the metal container scoop. This light weight steel scoop/dish allows for the weighing of loose grain or similar type material to be contained and held in place for establish its saleable contents. On the other side of the weighing cradle is a flat circular platform to hold various metal disc. All the disks used on this platform have their weight stamped on them. When the produced filled in the scoop balances with the metal weight on the opposite end of the balance match (visual horizontal appraisal) the appropriate quantity required is obtained. This scale does not have any visual markings on the arms to identify a true balance. It is therefore reasonable to assume that these scales were for domestic use only and not for commercial transactions. There are two weights that are useable with these scales, one is stamped "1 lB"(pound) and one stamped "1" and both are made as a solid round piece of cast metal.The smaller disc has a "1 lb" moulded and pressed form within a marked inner circle and a mouled ridge outer circle enclosure. Basic food ingrediences requiring mixing such as cakes scones and bread had to be hand blended.This mixing bowl is very significant to the Kiewa Valley andrural regions because it details not only what kitchens, be they commercial, domestic or rural camp, required to be stocked with but also a period in time when electrical goods such as blenders were not on in production and electricity was not available.This bowl is made from steel and has a green enamel covering. Pot Melting, circa mid to late 1900's
Before 1908 the words "melting pot" was a term relating to a "crucible" with a meaning of "a pot in which metals and other substances are melted (fused) to provide metal items of varying shapes and uses. From the mid 1900's this term changed and became more related to the "mixing" of social and ethnically diverse populations. The description used here is that of pre 1908. This melting pot was used in the early to late 1900's when produce and hardware shops were too far away from the Kiewa Valley and time was at the essence. The ability to manufacture as many "crucial " items at the home property was the difference between running a successful rural business or not. The isolation of the Kiewa Valley (before the 1950's), hindered the "time down" of machinery and important "widget" replacements. The ability of self sufficiency on properties is still a boon to rural properties as time lost is never really recovered.This melting pot is highly significant to the Kiewa Valley as it provides evidence that the graziers and cattle stations required to be self sufficient in all aspects of day to day maintenance and replenishment of worn materials requiring to be "manufactured " at the property and lack of replacements from commercially shelved products. This aspect of "survival" in the "bush" can be seen in the "huts" built on the Bogong High Plains to accommodate the seasonal grazing of cattle from the Kiewa Valley.This black melting pot is made of cast iron. The lid is missing. The top rim of the pot has three lips for poring accuracy. The formation of these lips are in a "triangle" formation. The top section of the body has a curve inwards reducing the pot diameter from 270mm at the base to 135mm.at the top. The handle is made from heavy gauge wire which is fastened to the body through two lugs (welded onto the top section of the pot) and fasten through a hole at the top of each lug. The handle has a "U" shape as it goes through the lug hole, ensuring no accidental fixture to any side thus allowing free swiveling from one side to the other . "BH" indented within a diamond shape. John J. Huntly appears to have been the only licensee of the Royal Oak Hotel, built in 1858. He was a Councillor of the Municipality of Belfast at the time and later became the Secretary of the newly formed Minhamite Shire in 1872. By 1861 D. Smith appears as the licensee of the now named Commercial Hotel. In 1877 it was offered for sale—the building described as follows “Built of bluestone with slate roof, having a frontage to Bank street of 106 feet, 6 inches. Accommodation consists of twelve bedrooms, eight sitting rooms, bathroom, bar and cellar and detached kitchen also of bluestones, with outside offices. Around this time beside its usual business the hotel had various rooms for visiting doctors and a dentist. Dr. Berncastle, who was associated with the Sydney Eye Infirmary, performed several operations there on those suffering from cataracts. It was the meeting place for the Port Fairy Freemasons, before their Lodge was built in James street, and all the local sporting clubs, at one time or another. The veranda was added in 1900. The name Royal Oak was restored this century, but the name Commercial Hotel can still be seen in the leadlight window over the front entrance. The hotel still continues serving patrons with beverages and meals but no beds these days.
